- Objectives :
- Acquire or deepen the knowledge of oils,
- Better understand their diversity in terms of constituents and categories,
- To know their main physicochemical characteristics,
- To know the ingredients resulting from the transformation of vegetable oils, the properties of physical, mechanical and rheological behavior
- To provide the basis for understanding dispersed systems, including phenomenological theory, impact of the nature of the lipids involved and analytical characterization.
