A process for the catalytic conjugation of double bonds of polyinsaturated fatty substances selected from the group of oils, free fatty acids and the esters thereof with a view to improving their drying properties, characterized in that the catalytic reaction takes place in liquid phase by the non-oxidising heating of a mixture of the fatty substance to be treated and of ruthenium metal on charcoal, the proportion of ruthenium metal being at least equal to 0.01% of the fatty substance weight.
