The present invention relates to a process for preparing diglycerides having, in position 2, a polyunsaturated fatty acid residue, characterised in that: there is used as starting material a dispersion, in water, of phospholipid(s) extracted from aminal tissue; the said suspension is treated with a salt of a divalent cation so as to cause flocculation of the said phospholipid; there is added to the medium obtained a quantity of phospholipase C corresponding to about 0.1 phospholipase unit per 1.5 mg of flocculated phospholipid; the precipitate obtained is filtered and the filtered solid product is recovered; it also relates to the products obtained using this process.
