✨ Crystallization of lipid formulas

OMVE's CRA226 pilot crystallizer, recently delivered to ITERG, is an essential piece of equipment for the development and optimization of fat crystallization processes. It reproduces the conditions applied by industrial equipment on a pilot scale (minimum 10 kg), i.e. continuous crystallization with a scraped surface exchanger. It comprises two crystallization tubes and an adjustable stirring unit. The principle is based on the passage of the sample through these different units, whose parameters are precisely controlled to optimize crystal nucleation, growth and homogeneity.

Alongside trials with and for industrial partners, ITERG is applying its knowledge of lipid and emulsified lipid crystallization to an in-house project. The aim is tostudy and understand the impact of process parameters such as feed rate, stirring speed and temperature kinetics on the application properties of the systems, while exploring new parameter combinations.

With precise control of nucleation and crystal growth, the crystallizer enables us to obtain products with controlled physico-chemical properties, stability and texture, adapted to the industrial requirements of various sectors such as food and cosmetics. This project enables ITERG to propose solutions that are both innovative and realistic from a transfer point of view, to meet today's challenges of plant-based, palm-free or any other formulas for which the manufacturing process plays an essential role.
