Evaluation of degradation products
of glucosinolates
Under industrial crushing conditions, glucosinolates, particularly
found in abundance in crucifers, including rapeseed, are mostly
degraded into various products, the nature of which depends on the precursor glucosinolates
and environmental conditions.
The method for determining glucosinolate derivatives developed by ITERG
is based on extraction/purification followed by GC-MS/MS analysis, and has been
validated on meal and crude oils.
Taking into account the latest advances, the analysis can now quantify
14 derived molecules, mainly from pro-goitrin, the glucosinolate
predominant in rapeseed, with quantification thresholds of the order of a few
hundredths of µmoles/g.
This method is now available in ITERG's Analyses catalog, in order to
to assist industry players in the quality control of meal
oilseeds
